Pad Thai is certainly among the most popular Thai dishes and it’s always been a favorite of mine. However, making this dish is actually a lot harder than it seems. As part of our new business venture, my husband and I have been making different versions of Pad Thai for the last few weeks. After much testing, tweaking, and of course eating, I think we came up with a pretty good take on this classic Thai stir-fry (he’s been to Thailand several times and agrees).

Tomato Ramp Pasta with Chicken
This weekend I’ve been eating ramps for breakfast, lunch, dinner or whenever I felt like having a snack. So here’s a quick pasta dish I made using my leftover 10-minute tomato sauce from the other day and about seven stalks of ramps. Feel free to mix in your preferred sauce or pasta. I used a small shaped pasta but spaghetti or linguini will work just was well.

Pasta with Mascarpone, Spinach and Mushrooms

So for lunch I decided to make pasta, one of my go-to ideas for quick and easy meals. The key ingredient that make this pasta recipe so delicious is Italian mascarpone cheese. How to Make Spaetzle – A Step-by-Step Guide
Spaetzle (spelled Spätzle in German) is a traditional side dish eaten throughout Germany. I didn’t know what it was until my first trip there and instantly loved it. Peasant food that dates back hundreds of years, spaetzle is an egg noodle, similar to dumplings, made of basic ingredients: flour, salt and eggs. There are many different ways to enjoy spaetzle. Pasta and beans, or Pasta e Fagioli, is a staple in Italian cooking. Like many Italian dishes, it started as a peasant meal consisting of basic, widely available ingredients. I love cooking with both pasta and beans, so I enjoyed preparing a dish that combines the two. The result is a well rounded dish where the beans provide a good amount of protein to the pasta. Leave out the butter and prosciutto for an excellent vegan meal.
