Easy Swedish Meatballs
In my previous post I baked some turkey meatballs as a nice appetizer idea for Super Bowl Sunday and they were so good my husband wanted more! This time I used the same recipe but with ground pork and a nice side of Swedish meatball sauce to go with it.

Spiced Potato Gratin Recipe with Kale and Coconut Milk
Over Christmas my husband was in Germany visiting family, while I was in Philadelphia. One of the gifts he brought back was a mandolin – German-made of course (here’s the link) – and I was thrilled! I always wanted a mandolin. The thought of thinly slicing vegetables with such ease just takes the stress away from food prep. Lacinato Kale Green Smoothie with Mango and Orange

Kale, one of the healthiest greens out there is perfect to use in a smoothie. I typically use curly kale but this time I blended Lacinato or Tuscan kale, of the dinosaur kale variety. A little history lesson: Lacinato kale, enjoyed by the Romans, has been grown in Italy for centuries and is used in much of Italian cuisine. The taste is also a bit milder and sweeter than curly kale, perfect for a morning green smoothie!
