Spicy Tomato Yogurt Soup
I love Greek food and try to incorporate the Mediterranean diet into my cooking (and eating) as much as I can. I love the fresh flavors, the quick and easy recipes and most importantly the strong emphasis on fruits and vegetables. Here is a delicious tomato yogurt soup recipe I adapted from a Greek cookbook I have. The result is a beautiful bright orange-colored soup that tastes fresh and creamy. Spicy Pear Chips with Cocoa and Garam Masala
I’m seriously going mandolin crazy! So far I’ve used my new mandolin slicer for baked potato chips and a spiced potato gratin. And just when I thought I’d be done with it, I see another mandolin-worthy recipe I just had to try. This recipe is adapted from a post I saw on Food52, a great website I go to for food inspiration. My version is crispy and sweet with a nice spicy kick.

Sardines – Why You Should Include Them in Your Diet
Today I’m trying out a new post format. My recipes usually focus on simple, high quality ingredients. So I thought it would be nice to provide a little more in-depth information on specific ingredients.
I’m planning on sharing some of my favorite foods, but also seasonal and/or exotic vegetables and fruits I may have picked up at the market. Chocolate Beer Cupcakes with 100% Whole Wheat Flour
This recipe is adapted from Dave Lieberman’s Chocolate Stout Cupcakes. I immediately loved the idea of this dessert – I mean it’s got beer in it – however, I wanted to make a healthier version. I ended up with a great tasting cupcake recipe using only 1/2 cup of sugar (plus a little stevia and maple syrup) and 100% whole wheat pastry flour and flax seeds for some extra fiber.

Baked Potato Chips – Topped with Dried Herbs
Ever since I got a mandolin slicer as a gift from my husband, I’ve been using it almost daily! Last night I was excited to make homemade potato chips, but of course I wanted a healthier alternative. Instead of frying the potato slices, I decided to make baked potato chips. Serve the chips as a delicious snack or together with a healthy dip during Super Bowl.
