Healthy Banana Muffins with Yogurt, Pecans and Chocolate Chips
I love baking muffins because of the endless possibilities. I try to make my muffins healthy, which to me means using whole, unprocessed ingredients and cutting down on sugar by using natural sweeteners such as dates, agave syrup, or honey. Banana muffins are a perfect example. Also check out my sugar-free banana bread where the sweetness comes from ripe bananas and a few dates.

Apples Roasted with Cinnamon and Brown Sugar served on Yogurt
Nothing says fall like apples! A wonderful way to enjoy apples when they’re in season is roasting them in the oven. I have adapted this from Not Without Salt, it’s a simple and versatile recipe. Once finished roasting you can either eat it for dessert with a scoop of vanilla ice cream or serve on yogurt topped with granola for breakfast (pictured above).
Frozen Berry Cobbler with Whole Wheat Flour and Coconut Oil
Most fruit cobblers use fresh fruit but I didn’t feel like going to the store this morning. And since I always have a few bags of frozen fruit in my freezer (mainly for my green smoothies), I decided to go ahead and make a frozen mixed berry cobbler. When I bake I typically use whole wheat flour and it works especially well in this recipe. As a butter substitute I used coconut oil which is a healthy fat and adds just a hint of coconut flavor to the cobbler.

And what’s great about my recipe is that it contains no added sugar at all! Well, there’s a tiny sprinkling of brown sugar on top but you can omit if you want. Honey Roasted Spiced Nuts with Garam Masala
If you like honey roasted nuts, you should try my version of this snack. I combined several varieties of nuts and spiced it up with some homemade garam masala, a spice mix common in India and other Asian countries. Garam masala is a spice blend containing ground peppercorns, cardamom, nutmeg, and cinnamon, among other spices. You can find it in Indian grocery stores or large supermarkets in the spice aisle. Or you can make your own which you can keep for several weeks and use in many other dishes.
