I’ve been craving chocolate chip cookies all week long, so I finally decided to make a healthy and simple version. There’s no baking soda or powder involved, just a handful of wholesome ingredients is all you need.
In addition to coconut oil – one of my preferred cooking oils – I’ve added coconut flakes. Grind them in a food processor if you want a finer consistency. I also used my homemade vanilla sugar so no need to add any vanilla extract.
Whole Wheat Chocolate Chip Cookies Recipe
Preheat oven to 375°F.
Mix together coconut butter, vanilla sugar, eggs and salt. Stir in coconut, flax, and whole wheat flour, then mix in the chocolate chips. Drop batter in spoon-sized mounds on a cookie sheet lined with parchment paper. Bake for 14-15 minutes. Cool slightly and remove from cookie sheet.
Total Time: 45 minutes
Yield: 12-16 cookies

I’m a fan of your blog and recipes now! Do you use coconut oil to sub butter in the exact amounts? I.e. if a recipe calls for 1/2 cup of butter then use 1/2 cup of coconut oil?

Awesome, thanks so much! Yes I substitute coconut oil for butter in the exact amounts. In some cases I use half coconut oil, half butter.
