Whole Wheat Chocolate Chip Cookies with Coconut

I’ve been craving chocolate chip cookies all week long, so I finally decided to make a healthy and simple version. There’s no baking soda or powder involved, just a handful of wholesome ingredients is all you need.

In addition to coconut oil – one of my preferred cooking oils – I’ve added coconut flakes. Grind them in a food processor if you want a finer consistency. I also used my homemade vanilla sugar so no need to add any vanilla extract.

Mix wet ingredients together, then add dry the ingredients.

Stir in chocolate chips then bake for about 15 minutes.

Whole Wheat Chocolate Chip Cookies Recipe

  • 1/4 cup coconut oil, melted
  • 1/3 cup vanilla sugar (see my recipe or just add some vanilla extract)
  • 2 eggs
  • a pinch each of salt
  • 3/4 cup coconut flakes
  • 1 tablespoon ground flaxseed (optional)
  • 1/2 cup whole wheat flour, sifted
  • 1/2 cup chocolate chips

    Preheat oven to 375°F.

    Mix together coconut butter, vanilla sugar, eggs and salt. Stir in coconut, flax, and whole wheat flour, then mix in the chocolate chips. Drop batter in spoon-sized mounds on a cookie sheet lined with parchment paper. Bake for 14-15 minutes. Cool slightly and remove from cookie sheet.

    Total Time: 45 minutes
    Yield: 12-16 cookies
