So I’ve been on a little peanut butter binge lately. Check out these recent desserts here and here. My latest creation is super easy, involves no flour and only four ingredients are needed. I love using peanut butter in my recipes because it’s such a great binding agent for any dessert, the perfect ingredient shortcut!
I used chunky peanut butter for the cookie batter and creamy for the spread but use whichever you like. Cocoa powder is added to the mix but if you can get your hands on chocolate peanut butter even better! Also, this recipe is not that sweet so add more sugar in to your taste.
Easy 4-Ingredient Peanut Butter Chocolate Cookies
- 1 1/4 cups peanut butter, plus extra for spreading
- 1/4 cup cocoa powder
- 1/2 cup sugar, plus extra for sprinkling
- 1 large egg
Preheat oven to 350°F.
Mix all of the ingredients in a bowl until smooth. Add more sugar to taste. With your hands, measure out round balls and place on a cooking sheet lined with silpat or parchment paper.
On the cookies, make criss-cross pattern with a fork. Sprinkle a little sugar on top then bake for 10-12 minutes. Cool the cookies for about 10 minutes. Spread peanut butter on the flat bottoms of half the cookies, then top each with remaining cookies.
Total Time: 30 minutes
Yield: makes about 15-20 cookies

What kind of peanut butter did you use?

Hi Lauren – I used chunky peanut butter, you can find it in anywhere but you can also use creamy PB…but honestly any PB will work. I’ve also tried chunky chocolate peanut butter and omitted the cocoa powder (http://www.amazon.com/gp/product/B001GQ3E3M/) and that works great too.

Do you think homemade peanut butter would work? (Only ingredient being peanuts)

I just tried the cookies. They didn’t stay together at all…. Maybe its being I am baking at altitude.

Hi Ashley – Sorry these didn’t work out for you! It’s possible baking at altitude is the problem. Or try adding in more peanut butter or an extra egg yolk.
