Mother’s Day is coming up and if you’re still trying to figure out what to get your mom, there’s nothing better than a gift you can make with your own hands. This super easy no-bake dessert is a cross between a typical strawberry shortcake and tiramisu because of the addition of ladyfingers and mascarpone cheese. Growing up my mom really enjoyed quietly cooking on her own in the kitchen. She loves simple recipes, so I decided to make her this incredibly simple shortcake for Mother’s Day this year (here’s last year’s Mother’s Day recipe). And if you don’t have access to agave nectar, then just use regular sugar. But I suggest to try it out as agave has a low glycemic index for a healthier alternative to traditional sugar.
Strawberry Shortcake with Ladyfingers and Mascarpone
Combine strawberries, rum, agave and 1 tablespoon of sugar in a bowl. Let stand about 30 minutes, stirring occasionally. Meanwhile, combine remaining sugar and whipping cream in a large bowl. Beat until soft peaks form. Fold in the mascarpone cheese and vanilla.
In a serving dish, evenly layer the ladyfingers, then strawberry mixture and top with mascarpone mixture and repeat layer.
Total Time: 45 minutes
Yield: 4 servings
