As fall season approaches, I decided to make a warm and comforting hot chocolate drink with a splash of alcohol to give it an extra kick. I used honey, a whole vanilla bean and a cinnamon stick to give it some warmth. Together they add an intoxicating aroma around the stove. Cocoa and rum are a great combination and make for a delicious ‘adult’ hot chocolate.
After you finish the recipe, pour it into a serving pot and share with some friends to “celebrate” the end of summer. For those of you who aren’t accepting the fact that summer is almost over, serve this cold over ice!
Rum Hot Chocolate Recipe
- 2 cups whole milk
- 1/2 cup rum
- 3 tablespoons unsweetened cocoa powder
- 1/2 vanilla bean, split lengthwise (or use vanilla extract to taste)
- 1 small cinnamon stick
- 3 tablespoons honey
In a small saucepan, bring milk, vanilla bean and cinnamon stick to a boil. Turn down heat to low and let sit five minutes for flavors to develop.
Discard vanilla bean and cinnamon stick. Turn off heat and whisk in the honey and cocoa until well incorporated. Remove from heat and mix in the rum.
[try this with my sugar-free banana bread or spiced honey roasted nuts]
