I’m a big fan of adding fruit to my salads, especially oranges. I just love the vibrant color and flavor they bring. This particular salad is the perfect blend of Mediterranean flavors, with sliced oranges, fennel, onion and olives.
Make sure to use juicy oranges, like Valencia. This simple and easy dish is best eaten outside on a hot summer day along with a glass of refreshing sangria. Another great Mediterranean salad to try is this flavorful kale salad with oranges and blueberries.

Thinly slice fennel, onions and olives.

Remove skin and white pith from oranges, then thinly slice and remove seeds.

Orange, Fennel and Onion Salad
Thinly slice the oranges, fennel, onion and olives, all horizontally. Place orange slices on a serving platter, then top with fennel, onion and olives. Drizzle olive oil over salad, then top with chopped parsley.
Total Time: 15 minutes
Yield: makes 4 servings

How beautiful! I love this salad with winter citrus. But my favorite version was in Rome, where the restaurant used blood oranges. Gorgeous!
