Muesli Chocolate Chip Cookies

Muesli Chocolate Chip CookiesLast week I made a large batch of homemade muesli and was thinking of a way to use it all up instead of eating it for breakfast. Since there are oats and dried fruits in the mix I thought of baking some chewy cookies. I just mixed in a few chocolate chips but otherwise this is a pretty simple recipe.

You can use store-bought muesli (I like Bob’s Red Mill) or easily make it yourself using my recipe. These cookies are moist on the inside and crisp on the outside. They’re so delicious and easy, the perfect way to use your muesli mix!

Mix dry ingredients together and in a separate bowl mix the wet ingredients.

Mix wet and dry ingredients together.

Stir in the chocolate chips and muesli.

Spoon onto a cookie sheet and bake for about 10 minutes.

Enjoy with a glass of milk!

This is my go to recipe to use up bottom of the bag stale muesli or granola; just made some today with granola with 1/4 c sugar and it’s so yummy!
