Dandelion greens aren’t just a nasty weed in your lawn, they’re actually great to use in green smoothies! The leaves are an excellent source of calcium, as well as vitamins A, C and K. They are bitter in flavor so you may adjust the amount of pears and dates to your taste. You can find dandelion greens in grocery stores like Whole Foods or at most health food stores.
To balance the bitter taste of the dandelion, I added pears, dates and coconut water for sweetness. If you don’t have coconut water, just add water or ice to the mix. I suggest drinking this chilled. And if you have dandelion greens left over, try making a salad.
Dandelion Green Smoothie Recipe
In a blender, combine pears, dates, dandelion and coconut water. Blend on the highest speed until smooth and creamy.
Total Time: 5 minutes
Yield: 3-4 cups

Gave this recipe a shot this morning and it was a tad on the bitter side. Will definitely use 2 pears instead of 1 next time. =)
