Roasted Pistachios with Fresh Thyme and Paprika

Roasted Pistachios with ThymeThere’s no easier snack to make than roasted nuts. I love the different variations you can do…salty, sweet, spicy, the options are endless. I’ve already made a few different roasted nuts recipes (check out my old posts, here and here) and decided to try pistachios with a mix of paprika. Straight from the herb garden on my balcony I tossed in fresh thyme and then some sugar for a salty and sweet combination.

Feel free to mix in some other nuts with the pistachios like almonds or walnuts. If you don’t have fresh thyme, you can easily use rosemary or oregano. And omit the salt if you use salted pistachios.

Combine all ingredients together and mix well.

Spread pistachios out evenly on a pan and roast for about 20 minutes.

Roasted Pistachios with Fresh Thyme and Paprika Recipe

  • 1 cup pistachios
  • 2-3 tablespoons olive oil
  • 2 tablespoons fresh thyme, roughly chopped
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

    Heat oven to 325°F. In a bowl, combine olive oil, thyme, paprika, sugar and salt with pistachios, mix well. Spread pistachios evenly out on a sheet pan and bake for 20-25 minutes, stirring once or twice to evenly roast. When done, allow pistachios to cool.

    Total Time: 30 minutes (then added freeze time)
    Yield: 1 cup of roasted pistachios
