Nothing says fall like apples! A wonderful way to enjoy apples when they’re in season is roasting them in the oven. I have adapted this from Not Without Salt, it’s a simple and versatile recipe. Once finished roasting you can either eat it for dessert with a scoop of vanilla ice cream or serve on yogurt topped with granola for breakfast (pictured above).
I roasted the apple chunks with coconut oil, a healthy substitute for butter. Combined with the vanilla bean it creates a wonderful aroma.
Roasted Apples Recipe
1 tablespoon brown sugar
Preheat oven to 425°F.
Combine all ingredients in an oven-safe pan. Roast apples for about 50-60 minutes, stirring every 15 minutes until apples are golden brown around the edges. Serve with vanilla ice cream, oatmeal or yogurt and granola.
Total Time: 60-70 minutes
Yield: 2 cups
