Tomato Ramp Pasta with ChickenThis weekend I’ve been eating ramps for breakfast, lunch, dinner or whenever I felt like having a snack. So here’s a quick pasta dish I made using my leftover 10-minute tomato sauce from the other day and about seven stalks of ramps. Feel free to mix in your preferred sauce or pasta. I used a small shaped pasta but spaghetti or linguini will work just was well.

How to Make SpaetzleSpaetzle (spelled Spätzle in German) is a traditional side dish eaten throughout Germany. I didn’t know what it was until my first trip there and instantly loved it. Peasant food that dates back hundreds of years, spaetzle is an egg noodle, similar to dumplings, made of basic ingredients: flour, salt and eggs. There are many different ways to enjoy spaetzle. You can eat it freshly cooked with a thick saucy stew or lentils. I also like to saute my spaetzle with sliced onions and fresh herbs (see the main image).

Pasta and Beans – Made with Whole Wheat Penne and Prosciutto

Pasta and beans, or Pasta e Fagioli, is a staple in Italian cooking. Like many Italian dishes, it started as a peasant meal consisting of basic, widely available ingredients. I love cooking with both pasta and beans, so I enjoyed preparing a dish that combines the two. The result is a well rounded dish where the beans provide a good amount of protein to the pasta. Leave out the butter and prosciutto for an excellent vegan meal.
